New Year's Resolution(s)

I would really like to finish the first book of the family history this year - but it is slow going, at least in part because it never seems quite "cooked" yet. When do you stop looking for more records?

Mmmmmm... yummy Bean Soup UN-Recipe

This is what I call an "un" recipe - nothing precise but really simple, for a body warming winter bean soup. It uses "convenience" foods to make what would be a long process short and simple.

Roast a small head of garlic in the oven til soft and buttery.

Saute some onion until translucent.

Add some bulk sausage, vegetarian sausage, or ground meat of your choice (sausage is already seasoned and favored, hamburger is not, so adjust accordingly). Once browned, stir in the roasted garlic. At this point, I toss in a small bag of frozen O'Brien potatoes (chopped a nice size by someone else, also has onions and other good stuff in with the potatoes).

Take 1 or 2 of the large glass jars of white beans and drain. Add everything thus far into a deep pot.

Take a large jar of unsweetened apple sauce and add to the mix.

(I like glass jars as I swear I can taste the metal of cans but you can use cans if that doesn't bother you)

Add enough low salt broth to make a soup the consistency that you like, and add herbs and spices of your choice (I like rosemary, ras el hanout - a moroccan blend - and cinnamon). Heat very slowly (don't let it boil) to meld flavors - you don't want things to get mushy.

If it needs thickening when done, add a handful of mashed potato flakes.

To serve, put in bowls and top with some herbed goat cheese. Garnish with a slice of apple, if desired. Serve with a slice of cornbread.

Note that the soup becomes better the next day...
